Tasty and tender calamari

To make squid taste even better and stay tender, try cleaning your catch when fresh, cut into rings as normal (not too thin).
Soak the squid rings in a mixture of milk and a couple of cloves of garlic (crushed). Allow to soak for no more than 20 minutes.
Roll the squid rings in cornflour, then dip into a mixture of well beaten eggs with a splash of milk and a tiny pinch of pepper.
Roll in breadcrumbs and cook in fairly hot extra virgin olive oil for no more than about a minute or so until they float and the crumbs are golden brown.
Tasty and always tender Calamari.
