Barbecue Salmon Special

Ingredients

  • Salmon
  • Brown sugar
  • Lemon juice

Method
Fillet one salmon with skin side down, sprinkle liberally with course salt depending on size of fillets, leave for 10 minutes.

Wash salt off and place fillet skin side down on tin foil and sprinkle liberally with brown sugar. Then squirt on lemon juice until brown sugar is quite moist.

Fold tin foil over fillet to seal and place either on barbecue or in oven at medium heat. After 11-14 minutes start checking to see if fish is cooked.

The fish should be cooked through but still moist. It is important not to overcook this dish; it will dry very quickly and loose flavour.

Very easy to cook and very delicious.
