What is the best way to fillet a Flathead

I have tried many ways to fillet a Flathead. But always seem to throw away more of the flesh than I ever get a chance to eat, due to the bones. What in your experience is the best way to fillet a Flathead with the minimum amount of bone in the fillet?

Also I am soon looking at going down to Barwon Heads, what is the most commonly caught fish and with which bait and or lures?
